Pale, clear, quite loose honey. Unmistakeably floral nose. Lovely, creamy mouthfeel. Loads of meadow flowers in the taste - lilac? Lavender? Good burnt sugar/caramel notes towards the end, too. It's a sweet honey, maybe slightly too much so - a touch more acidity would add complexity.

Pale and with a marvellous complex aroma, which then transposes to the palate. Beautifully floral and rich, but light at the same time, almost going into marzipan territory and very delicious indeed. The texture is fine and light in the mouth and the depth to the taste is just lovely.

This has a lovely florality, glistening and pale golden in colour; it has aromas of alpine meadow flowers, herbs and lavender, with a beautiful delicacy. The flavour is quite strong and intriguing, with distinct lavender notes, and a mystical quality. It is very sweet, to the degree that this almost overpowers the individuality of the floral and sweet herb aromas. Mixed opinions on this table, with the aromas delivering to a higher level than the flavour.

Nice clean clear honey. Floral on the nose and the palate. Honey is such a challenge for us, because how do we advise on improvements? We can't talk to the bees. This is a very solid single star.
